Hot cross blondies | Easter with Lidl

Looking for a twist on classic hot cross buns? In this sponsored collaboration with Lidl, Michelin starred chef Kevin Love mixes things up with a recipe that’s part carrot cake, part blondie (spoiler alert: it’s amazing). Enter Mumsnet blogger Emma, of BrummyMummyOf2, and star bakers Erin and Ethan who were more than happy to get stuck in with the fun of Easter baking.<br /><br />Recipe<br /><br />Ingredients<br />Blondie mix:<br />100g white chocolate chopped<br />25g butter<br />1 egg<br />50g demerara sugar<br />50g flour<br />170g cooked and mashed carrot<br />25g chopped dark/milk chocolate<br />1tsp vanilla extract<br /><br />Orange glaze:<br />1tbsp smooth orange marmalade<br />2tbsp hot water<br /><br />Icing:<br />120g icing sugar<br />10ml warm water plus extra if needed<br /><br />Method<br /><br />Pre heat oven to 180c<br /><br />1. Melt the white chocolate and butter together in a bowl over barely simmering water until smooth then allow to cool for 5 mins<br /><br />2. In a separate bowl whisk the sugar and egg together until fluffy then add the vanilla extract followed by the melted chocolate mixture.<br /><br />3.Sift in the flour and fold together then add the cooked carrot and chopped dark/milk chocolate and mix until fully combined.<br /><br />4. Pour into cake pop moulds and bake in the oven for 10-12 mins.<br /><br />5. Remove from the oven and allow to cool for 10 mins before removing from the mould and then cool completely.<br /><br />6. Make the orange glaze by mixing the marmalade with the hot water until the consistency of runny honey, brush the glaze over the blondies.<br /><br />7. Make the icing by mixing the sugar and water together until smooth, then pipe or drizzle a cross on top of the blondies.<br /><br />Like this?
